Serves 10 guests
For the Clementine Cordial (yields 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
For the Cocktail (yields 850ml, to serve 10)
400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Method
For the Citrus Syrup: Put the listed components into a saucepan, bring to a gentle boil, agitating so the sugar melts. After that, take off the heat and leave to reach room temperature completely. Decant into an sterilised bottle, seal and store in the refrigerator, where it will keep for about one month.
To make Cocktail Base: Mix the specified liquid ingredients in a sizeable container, leave to sit for 60 minutes, then strain preferably using cheesecloth, to ensure it's completely strained.
For serving: Add 85ml of the cocktail base into your cocktail shaker filled with ice, and agitate carefully for about 60 seconds to chill. Strain into a frosted cocktail glass or equivalent, garnish with the cranberries and finish with a quick spritz with the mandarin essence over the top.
